I looked it up, as I didnt want to guess...
"fan knives" and "butterfly knives" from the motion and "click clacks" from the sound they make when they are opened and closed.
I guess you could hold the blade, raise and lower the knife emulating a Butterfly. LOL LOL

My grandfather had a small market in the 40's & 50's. Folks would trade stuff for stuff. He had a box of knives at his house and I used to be able to pick one out now and then when I was young. He passed away when I was about 10.
Here is my 1st Butterfly knife, one I picked out in the mid 60's from the box. Not much of an example, but probably typical of the era.
